chocolate chip walnut bumpy cookies



I'm not cut out for baking. But last week, I got this mad craving for chocolate chip walnut cookies. And no store-bought kind was going to do it for me. So when I found a recipe on allrecipes.com with great ratings, I had to try it. The recipe looked easy enough for my limited baking skills and so I dug out the ingredients with gusto. I found that cuting the portion of chocolate chips in half (2 cups to 1) was still plenty and tasty.

INGREDIENTS
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon salt
1 cup semisweet chocolate chips
1 cup chopped walnuts

DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. Cream together the butter, white sugar, and brown sugar until smooth.
3. Beat in the eggs one at a time, then stir in the vanilla.
4. Dissolve baking soda in hot water. Add to batter along with salt.
5. Stir in flour, chocolate chips, and nuts.
6. Drop by large spoonfuls onto ungreased pans.
7. Bake for about 10 minutes (9 minutes in my oven does the trick with parchment lined paper) in the preheated oven, or until edges are nicely browned.

I have to say they turned out pretty darn good. The cookies should have soft, chewy centres and crispy edges. After making these a few times, I found that dropping the cookie dough onto the sheet and making them a pile high makes them come out nice and bumpy looking :)

I use a recipe that uses Golden syrup, i'll be thinking about cookies all day now!

They look great, Tanya! However, I simply can't support any baking-related decision that involves the reduction of chocolate :)

I might just have to try this recipe with 3 cups of chocolate chips!
